Lobster, one of the most popular edible crustaceans, is increasingly threatened with extinction – perhaps for this very reason you should afford yourself the not everyday luxury and bring it to the table as a delicate entrée. In any case, it is one of those fruits of the sea that give a tangy thrill to the palate and are a delight to the eye when beautifully prepared and garnished.

Cut fresh peaches into thin strips and mix with the lobster meat.

Season everything together with a pinch of salt, juice of one lemon and a good dash of cognac.

Let the ingredients work for about 20 minutes, then bind with the mayo and arrange on the lettuce leaves.

You can serve it with toast with butter.

If you like, you can serve it with a Chablis.
