Cut the cooked lobsters in half. Remove the claws and tail and warm the lobster meat in a light stock with a little butter. Attention: The lobster must not get too hot, otherwise its meat will become too tough! For the dressing, mix the yolks with a bit of vinegar and salt and slowly add the oil as you would when making mayonnaise, until the mixture binds nicely. Finally, dilute again with a little cream, so that the sauce does not taste too hearty. Season to taste with salt and pepper. Cook the pea pods in salted water until firm to the bite. Rinse in salted ice water, dry on a cloth and marinate with vinegar, oil and salt. Slice diagonally and arrange decoratively on plates. Also marinate and arrange the cleaned salads. Place the lobster in the center and pour raspberry dressing over it.
