PREPARATION Preheat the oven to 200 °C. PREPARATION For the filling, skin the liver sausage. Peel the apple and cut into very small cubes, finely chop the marjoram and mix both with the liver sausage mixture. Season with salt and pepper. Whisk the egg yolks together. Roll out the puff pastry into a rectangle on a floured work surface and cut into 8 equal squares. Brush the edges of the pastry with egg yolk. Now place one-eighth of the liver sausage mixture in the center of each pastry square and then fold it diagonally to form a triangle. Press the edges well and brush the surface with egg yolk as well. Line a baking tray with baking paper. Place the puff pastry patties on it and bake in the hot oven on the middle rack for a good 10-12 minutes until golden brown.
