Instructions:

For the lime syrup, bring sugar and water to a boil. Add the lime zest cut into fine strips and simmer gently for 15 minutes without liquid evaporating.

Mix arrowroot flour with the lime juice, pour into the saucepan while stirring. Bring to a boil and simmer gently until liquid runs clear and thickens slightly.

Pour into sterile bottles and store in the refrigerator after cooling.
