Heat half of the butter in a large frying pan. Add long-grain rice and stir over medium heat for two minutes. Add olive oil and extinguish with hot soup (1). Reduce heat and gradually add more soup, stirring throughout, until risotto is cooked.

Fold in Parmesan cheese and remaining butter, if necessary season with salt and freshly ground pepper.

Mix egg yolks, juice of one lemon and zest in a cup until well blended. Remove the risotto from the heat and fold in the mixture. Place on the hot plate again, stirring vigorously for a minute, then bring to the table on the spot.
