Instructions:

Leineweber – a special type of pancake with cooked, peeled potatoes from the southern Münsterland region.

Peel cooked, peeled potatoes and cut into slices. Clean parsley and chop finely. In a baking bowl, stir flour with eggs and milk. Season to taste with the spices. Heat fat in batches in frying pan. Fry 1/4 of the potatoes at a time. Pour 1/4 of the batter on top. Roast for about 5 min. Carefully turn pancakes to the other side and toast the other side for about 3 min. Keep warm until all pancakes are fried. Sprinkle with parsley

Serve with mixed leaf salad.
