Instructions:

For the country cookie pie, preheat the oven to 180 degrees. Place country cookies in a foil bag, crumble finely with a rolling pin.

Cream butter, add country cookies, sugar and cinnamon and knead with milk and flour to a dough.

Line a greased pie or springform pan (26 cm diameter) with two-thirds of the dough, raising a rim.

Peel apples and pears, cut into quarters, remove core, cut into wedges and mix with sugar, cinnamon and cornstarch.

Roughly chop cashews and pine nuts, add to apple and pear mixture and spread everything on the bottom of the pie dish.

Roll out remaining dough thinly to the size of the pie dish, place as a lid on the filling and press the edge with a fork.

Prick the lid several times with a fork and bake the country cookie pie for about 45 minutes (electric and natural gas oven: 180 degrees/level 4, convection oven 160 degrees).
