For the leek strudel, dice the ham and cut the leek into thin slices. Fry the whole thing in a little oil, season well with salt and pepper.

Add the parsley and Emmental cheese and mix well. Let the filling cool down a bit, otherwise the dough cannot be rolled up and sticks!

Then roll out the finished dough and spread the filling evenly on it. Roll up the dough, prick the surface several times with a fork and brush with the beaten egg.

Place the strudel on a baking tray lined with baking paper and bake at 180 °C hot air for approx. 30 – 35 minutes.
