Instructions:

Place meat in a suitable bowl with spices, quartered onions, garlic cloves and peeled lemon zest. Stir through wine and soy sauce and cover and refrigerate for 24 hours. Turn once to the other side.

Dry meat, rub with salt and pepper, place in a cooking pot and baste with hot clarified butter. Put the lid on and cook in the oven at 225 °C for about 1 hour.

After half an hour add pieces of tomatoes, onion and garlic. Keep the meat warm, season the vegetables with meat sauce, sugar, salt and green pepper. Serve together with the meat.

Cook bread dumplings according to package instructions. Mix parsley, nutmeg, cheese and pepper and sprinkle over the bread dumplings or turn the dumplings in it to the other side.
