Instructions:

Rinse spinach leaves, remove stems and blanch in a saucepan of boiling hot water. Rinse in a baking dish with iced water and rub dry with kitchen roll. Fry the mince, add the remaining ingredients and remove from the heat. Put a heaped tbsp. of the mixture on each spinach leaf and roll up. Serve with tahina yogurt.

Tahina yogurt: Mix all ingredients, refrigerate until ready to use.

Note: Spinach rolls and yogurt can be prepared a day ahead.

Tahina is available from the Turkish or Greek, is a paste made from sesame seeds, can be substituted with peanut butter.
