Kohlrabi Soup with Char

In a saucepan, sauté onion cubes in oil until translucent, add kohlrabi cubes, pour in clear soup and cook just below boiling point for fifteen to twenty minutes until tender. Remove kohlrabi cubes (1 tablespoon per person) from clear soup and keep warm. Add whipped cream and butter to soup and blend everything together. Season with salt, nutmeg and cayenne pepper.

For the chowder, season the fillets with salt, season with pepper and fry in a frying pan on the skin side in butter (or oil) until crispy. Remove from heat, turn to the other side and fry for one minute.

Briefly sauté the mushrooms in butter in a frying pan over medium heat (they may well be browned in the process). Add lemon zest and garlic, season with salt, pepper and parsley. Drain the mushrooms on paper towels and place them in soup bowls with the kohlrabi cubes.

Repeatedly lather the soup and spread it evenly over the top. Place the char fillets in the center of the plates.
