For the knight’s castle cake, bake double the amount of the favorite cake, depending on the desired size. Divide the cake into a rectangular base shape (approx. 30 x 30 cm) and 4 round towers (10-12 cm high, 8 – 10 cm in diameter).

As “glue” for the decoration elements, heat the milk chocolate with about 2 tablespoons of milk in the microwave and stir well.

Apply with a brush or spoon not too sparingly. Roll out the rolled fondant and place it over as large a board as possible. This will form the water for the moat around the castle.

Place the cake square as desired and “glue” the towers to the corners of the rectangle. Coat everything to be attached with chocolate glue and press into place as desired.

Attach Toblerone as battlements as well as glue 1 nougat roll as a defense cannon. The bottom is a mosaic of mini butter cookies with and without chocolate.

The drawbridge is made from the Ritter Sport bar and 2 chocolate sticks. Chocolate chip cookie rolls form the walls between the towers. The green area of the Ritterburg cake results from the green gum strings.
