Kerstin’s Favorite Recipe for Cinnamon Stars

Beat egg whites until stiff. Sift the powdered sugar and gradually fold in. Set aside just under half of this mixture – this will later become the coating. Later, fold in the almond kernels and cinnamon and knead into a dough. The dough is then rolled out on sugar. It should be about half a centimeter thick. I don’t use a pasta walker for this because the dough is extremely sticky, but flatten it with my hands (if you also put a little bit of sugar on your hands, the sticking will be kept to a minimum). Then cut out stars and put the whole thing in the oven at 160 °C for about 20 min. Remove the cookies from the oven, cover them with the egg white and sugar mixture and bake them again for a short time.
