For the cheese dumplings, sauté onion in oil. Mix warm milk with eggs, salt and pepper and soak the dumpling bread in it, let it rest for about 20 minutes.

Mix in flour, grated cheese and parsley. Form flat dumplings and fry in heated oil on both sides until crispy and golden brown. Let the Kaspressknödel steep in hot soup for about 10 minutes before serving.
