For the kangaroo steak, season the meat with salt and pepper to taste and fry on both sides for about 3 minutes over high heat. It should be roasted pink. Then keep warm.

For the sauce, heat chili oil in the pan and saute garlic and the ginger in it, then caramelize with honey. Deglaze with plum vinegar and let it boil down a bit. Cut the plums (if you don’t get fresh ones, you can also use dried fruit) into small pieces and simmer everything together with the wine for 12 minutes. Then finely puree and pass through a sieve.

Pour the sauce over the kangaroo steaks and serve together with some salad and the orange fillets.
