For the recipe Juicy Orange Almond Cake, wash the oranges carefully and remove the stalk. In a saucepan, cover the whole oranges (with the peel!) with water and simmer for about 60 minutes so that the fruit pops a little and becomes quite soft. Let cool slightly, then cut open and remove the seeds. In a stand mixer – or a large, tall container with a hand blender – combine the oranges along with the eggs, sugar, almonds and baking powder.
Spread the mixture on a baking sheet lined with parchment paper and smooth it out. Bake in the oven preheated to 190° C for about 35 minutes.
Then let the juicy orange-almond cake cool and cut into slices or form shapes with cookie cutters as desired.
Don’t be put off by the thought of including the peels – this cake tastes deliciously of oranges!
