Instructions:

Dough:

1. Preheat oven to 200 °C. Mix flour with baking powder. Sift onto the surface and press in an indentation. Pour in sugar, vanilla sugar and eggs. Place butter in small pieces on the edge. Chop through with a large kitchen knife and quickly knead together to form a smooth dough. Wrap in plastic wrap and place in refrigerator for about 30 min.

2. roll out dough. Line a greased fruitcake pan with it. Poke dough bottom a few times. Bake for approx. 30 min. Remove, cool on a cooling rack.

Topping and decoration:

1. rinse the cherries, drain well, remove stems and pits.

Mix the pudding powder with a little cold milk. Bring the rest of the milk to the boil with the sugar. Stir in the pudding powder, let it boil once, cool down.

3. coat the pastry base with the pudding. Spread cherries evenly on top. Cook cake glaze according to package directions and coat fruit with it. Let cooking chocolate melt, decorate edge of cake with it. Leave to cool for 2 hours. Garnish with lemon balm.

Time needed : preparation about 20, resting about 30, cooling about 2 hrs, baking about 30 min.
