Prepare all ingredients in a hand blender to a paste.

Leftovers keep well sealed in the refrigerator in about 1 month.

Pastes of spices, herbs and onions are the authentic way to flavor “jerk”. Simply grate the paste into the raw meat to flavor it. This is a medium spicy one like this, it can be made spicier by adding more Hot or Chillies Pepper Sauce. If you want it more moderate, remove the seeds before grinding. Scotch Habanero or Bonnet would be the correct chili varieties, but you can substitute them with Serrano or Jalapenno.

Our tip: It is best to use fresh herbs for extra flavor!
