For the jam cakes, knead a yeast dough from flour, milk, sugar, a pinch of salt, yeast, eggs and 75 ml oil with a food processor until it forms a smooth ball. Let it rest and rise.

Knead the dough again and form it into a roll. Cut off pieces of the same size and form into balls. Pull the balls out over the back of your hand to make flat discs with thin centers and bulging edges.

Set deep fryer to medium heat, when the fat is hot enough, bake the cakes in order until crispy, drain on paper towels, fill the center with jam and serve the jam cakes warm. Are also good cold.
