Instructions:

Wash the veal cutlets, pat dry and pat flat. Season with salt and pepper and top with 2 slices each of tomato and bacon.

Roll the veal cutlets tightly, secure with a toothpick or twine. Heat oil in a pressure cooker. Sear veal cutlets all around in it, then remove and set aside. Add flour to hot fat, let it color briefly and immediately deglaze with stock.

Add the meat again and simmer on low heat in the pressure cooker for about 10 minutes.

Remove the involtini from the pressure cooker and serve as desired.
