Instructions:

(*) Green curry is available in Indian and Asian grocery stores. It is a mixture of finely chopped fresh herbs: coriander, white mint, ginger, lemongrass and basil are included.

Select and rinse the lentils, then pour them in about l of boiling water and make 8 minutes, they should keep their color and consistency. Drain well.

In a baking bowl, mix the juice of one lemon and the olive oil. Then add the spices and mix thoroughly.

Mix the vegetables with the marinade and finally add the lentils and the lettuce.

Serve on papadams. Papadams are paper-thin patties made of lentil flour, available in Indian grocery stores. The patties are fried very briefly in hot fat.

Our tip: If you like to cook with fresh herbs, it is best to get kitchen herbs in pots – so you always have everything ready!
