Instructions:

A bean recipe for every taste:

1. heat ghee or oil in a saucepan, add prepared vegetables except zucchini and green bell pepper and roast over medium heat for 5 minutes, stirring frequently. Add garlic, ground coriander, paprika seasoning and curry paste and make one minute, stirring continuously.

2.Stir in clear soup and season with salt. bring to a boil, cover and simmer gently over moderate heat, stirring occasionally, for 25 min.

3. stir in black-eyed peas, sliced zucchini and green peppers, cover and make another 15 min, or until vegetables are cooked.

4. Puree 300 ml of the soup mixture (about 2 ladlefuls) in a food processor or hand blender. Return the puree to the soup in the saucepan and heat repeatedly until boiling hot. Sprinkle chopped cilantro on top, if desired, and bring to the table hot.

A hearty soup so nutritious and rich that it can be served with whole wheat bread as a main course.
