Bring sour cream, 80 g sugar, orange juice and milk to a boil, pour 4 egg yolks with the hot liquid, stirring continuously, set to “rose”, that is, all the liquid is bound and the amount is thick creamy, pour through a sieve, cool, then freeze in the ice cream maker, stirring.

Clean the strawberries. Set aside the most beautiful fruit and sweeten with powdered sugar. Whisk the remaining berries with powdered sugar and orange liqueur and strain.

Steep the woodruff in the white wine for one hour. Beat the wine with the remaining sugar and one egg yolk in a water bath to a sabayon. Put some strawberry pulp on the plate and arrange the berries on top. Cut out two dumplings of sour cream ice-cream with a hot tbsp. and place them on the berries. Drizzle the berries with the wine foam.
