Iced Kaiserschmarrn with Marinated Berries

Instructions:

For the marinated berries, crush the raspberries with the sugar and pass through a sieve. Add the almost defrosted berries, soak and season with sugar if necessary. Add Grand Marnier and juice of one lemon if desired.

Beat the egg yolks and egg with a third of the sugar, vanilla pulp and lemon zest until light and creamy.

In the meantime, lightly whisk the remaining sugar with the water until the syrup is clear. Stir into the egg yolk mixture and continue beating until cooled. Stir in the whipped cream and rum raisins.

Line baking sheets or trays with parchment paper. Brush the parfait mixture on it until just under 1cm thick and freeze in the freezer.

For the glaze, melt the milk chocolate in a water bath and stir in the oil. Remove the parfait from the freezer and brush the surface thinly with the chocolate-oil mixture.

Refreeze briefly again, then break into bite-sized pieces.

To serve, arrange on cold plates and sprinkle with freshly toasted, cooled almond kernels. Top with the marinated berries and fresh raspberries.

Tips This dessert can be made very well in advance, it keeps well covered for several days in the freezer. Immediately before serving, just break it into pieces and arrange on cold plates.

The fruit garnish can be varied as desired, depending on the season. ‘
