For the Iced Apple Cookies, cut apple rings into very fine cubes. Mix with the jelly. Grate apple into it, mix immediately. Add spices.

Cream butter until peaks form. Add raw sugar and egg yolks and stir briefly. Stir in the apple and spice mixture. Combine flour and baking powder. Add and mix to form a dough.

Preheat the stove to 180 °C.

Divide the dough into portions, form into balls and place on a baking sheet lined with baking paper, spacing them widely apart. Place some baking paper on each ball and flatten it using a drinking glass at least 6 cm in diameter. Bake in the lower half of the oven for about 12 minutes. The edges may turn slightly brown. Cool.

Mix confectioners’ sugar with enough Calvados to make a thick glaze. Place in a piping bag and pipe in a lattice pattern over cookies. Cut apple rings into fine sticks with scissors. Place decoratively on top of Iced Apple Cookies with a little glaze.
