Mix hazelnuts, baking powder and flour in a bowl.

Cream vanilla sugar, powdered sugar, salt and butter. Then stir in rum and lemon juice. Gradually beat in the egg yolks.

Add to the flour mixture and knead into a smooth dough. Form the dough into a ball, wrap in plastic wrap and let rest in the refrigerator for at least 2 hours.

Before proceeding, line a baking sheet with baking paper. Preheat the oven to 170 °C.

Divide the dough into 3 parts and form each into a roll. Cut down pieces of equal size and roll into balls. Use the end of a wooden spoon to make a hollow and place the doughnuts on the baking tray.

Place the doughnuts in the oven and bake for about 15 minutes.

Stir the jam until smooth and pour into the cavities.
