For the hot honey peach, scald peaches with boiling water and peel off the skin. Grate lemon and cut in half, pour lemon juice into an ovenproof container, and toss pitted, halved peaches in lemon juice.
Place peaches with the curvature facing down and pour the honey into the pit cavities. Top with the sprigs of lavender. Bake at 200 degrees for about 10 minutes.
