For the honey cake horses, if the honey is not liquid, warm it a little. Then beat eggs with sugar until foamy, slowly add honey.

Mix flour with baking soda and ground almonds and honey cake spice. Then knead everything together. Let the dough rest for one night. Roll out about 1 cm thick and cut out rocking horses.

Brush the horses with milk. Then decorate the horses with nuts and candied fruits. Preheat the oven to 180 degrees. Put the baking tray lined with baking paper with the horses in the hot oven on the second lowest level.

Bake for 8 to 12 minutes.
