Instructions:

For the elderberries, mix flour well with milk, powdered sugar and a pinch of salt. Add eggs and beat until smooth.

Dip the elderflowers one by one into the batter, fry in hot fat until light brown and drain on paper towels. Sprinkle with cinnamon sugar and serve with the prepared must foam.

For the must foam, beat the must with yolks, sugar and lemon zest in a hot water bath with a whisking rod until the mixture becomes thick and hot. Then remove from the water bath and continue beating until the must foam is nice and thick and fluffy.

Serve the baked elderberries with the must foam.
