For the Holler Cupcakes, grate the zest from the lemon and squeeze the juice from the lemon. Set the lemon juice aside.

Preheat the oven to 175°C.

Mix the sugar, butter, salt and a little of the lemon zest with a hand mixer. Beat in the egg until creamy.

Sift the flour with the baking powder and mix in the custard powder. Mix the mixture with the flour and the elderberry syrup.

Place paper cups in a muffin tray and spread the mixture evenly on top. Place the cupcakes in the preheated oven for about 20 minutes.

After removing, prick each cupcake several times with a fork and pour the elderberry syrup over it.

For the topping, mix the lemon juice with the powdered sugar until creamy. Spread the frosting on the cooled cupcakes and garnish the Holler Cupcakes as desired.
