For the herring salad, first boil the potatoes and beet separately until soft, hard boil the eggs. Finely chop the herring, apple, cucumbers and leek, chop the capers, mix everything together.

Peel and chop the potatoes, mix with cream and yogurt and season with vinegar. Divide the salad into three parts. In one part mix the cooked, peeled and diced red beets.

In the second part, mix the eggs cut into small pieces. In the third part, mix in the beetle beans and the pumpkin seed oil. Season to taste with salt and pepper.
