For the hearty potato casserole, preheat the oven to 180°. Grease an ovenproof pan with a little butter.

Either wash the spinach and blanch it in a little salted water (if using fresh) or, if using frozen spinach, let it thaw. Roughly chop the spinach.

Cut the sausages into slices. Sauté the onion rings with the garlic in the olive oil, add the spinach and sauté for a few minutes. Season with salt and pepper.

Cut the potatoes into equally thin slices and layer half of them in the pan. Spread the spinach on top together with the sausages. Layer the second half of the potato slices over the spinach.

Mix the eggs, creme fraiche and cremefine well. Season the mixture with salt and pepper. Pour this mixture over the casserole.

Sprinkle the grated parmesan on top and bake the hearty potato casserole for about 45 minutes. If necessary, turn up the temperature to 200° for the last 10 minutes so that the cheese forms a nice crust.
