For the hazelnut fritters, mix flour, ground hazelnuts, sugar and vanilla sugar. Add cold butter and the 2 egg yolks. Knead everything very quickly into a smooth dough. Place the dough in plastic wrap in the refrigerator for at least 1 hour.

Then form balls about 2 cm in size and place them on a baking tray lined with baking paper. Preheat oven to 180 degrees. Using the handle of a wooden spoon, press a hollow into each ball. Fill each with currant jelly, apricot jelly or hazelnuts.

Bake the carps at 180 degrees for about 15 minutes until golden brown. After cooling, dust the hazelnut fritters with powdered sugar if desired.
