Preheat oven to 220 °C (convection oven). Cover a baking tray with baking paper.
Separate eggs, carefully slide yolks into a separate bowl, they must not be damaged. Put egg whites in a bowl, beat to snow.
Cut ham into strips, mix with the Parmesan, season with salt and pepper, fold in carefully.
Place eight small clouds on the baking sheet, form a hollow in the center with a tablespoon. Bake in oven for about 3 minutes until lightly browned.
Carefully slide the yolks into the prepared depressions of the clouds, salt, bake for another three minutes.
Sprinkle with chives and eat immediately.
