For the ham and cheese puff pastry strudel with vegetable dip, first line a baking tray with baking paper. Preheat the oven to 180 °C.

Wash the parsley, dry well and chop finely. Cut ham into fine strips. Grate cheese. Beat eggs and mix with ham, cheese, parsley, salt and pepper.

Roll out the puff pastry and spread the filling on one side. Roll into a strudel and place on baking sheet. Brush with beaten egg and bake for about 20 minutes until crisp.

In the meantime, place the vegetables in a tall blender jug and puree until fine. Meanwhile, drizzle in a little oil to make a fine paste. Season to taste with salt and pepper.
