Grilled Salmon Steaks with Herb Butter

For the herb butter:








Instructions:

First, for the herb butter, stir the butter until thick and creamy.

Peel and finely chop the garlic and shallots, and chop the parsley just as finely.

Add the garlic, shallots, parsley, salt and a little pepper to the butter and mix well.

For the fish, preheat the broiler for 15 minutes until very hot.

Dry the salmon steaks well with paper towels. Using a pastry brush, brush both sides of the steaks with melted butter, place on the broiler and broil for 3 minutes on each side (the top of the steaks should be 7 to 10 inches from the heating element).

Then brush with the remaining melted butter or with the butter from the grill pan, season with salt and with pepper and grill for another 3 minutes.

Turn over, brush again with butter and grill for another 5 to 8 minutes, until firm to the touch.

Transfer the steaks to a warmed serving platter and garnish with lemon quarters or slices.

Spread the herb butter over the steaks or serve separately.
