Grilled Balinese Pork Roast

A bean recipe for every taste:

Either cut a deep pocket in the roast pork or slice it as a rolled roast ( Ralph ).

For the spice paste garlic, chili, shallots, Tumeric, Galangal, ginger, pepper, coriander, lemongrass, lime juice, sugar and salt in a deep mortar form and mortar everything together to a fine paste ( also prepare in a hand blender to a paste ).

Heat 3 tbsp oil, roast paste in it for about 5 min until it becomes shiny. Cool.

Half of the spice paste in the roast form, tie with spaghetti. Spread remaining paste evenly on outside.

Prepare broiler for indirect grilling, broil roast at about 375 F (190 C) for 2 hours until nicely browned and crisp ( internal temp. 86 C / 190 F ). Brush from time to time with the remaining oil ( Ralph

Rest meat for 10 min, then remove splits and slice diagonally into 1 cm slices. Serve with long bean leaf salad and Balinese yellow rice.
