For the Green Banana Parsley Soup with Cucumber, first peel the bananas and put them in the stand blender.

When the peel from the cucumber is very hard, peel cucumber and cut half into rough pieces. Add to blender along with washed parsley and Batavia lettuce. Add water and puree until fine.

For the garnish, cut the other half of the cucumber into small even pieces and add to the soup as a garnish. Chop some leftover parsley and sprinkle over the Green Banana Parsley Soup.
