Instructions:

Cut the crust of the bread into small pieces, soak the slices in vinegar for 10 minutes. Squeeze the bread thoroughly and blend in a hand mixer or food processor together with garlic and almond kernels. (If using a hand mixer, add 2-3 tbsp. at a time). Gradually add the olive oil and work the mixture through until smooth. Season the sauce heavily with salt and freshly ground pepper. (makes 375 ml)

Our tip: Use sweet red wine for a sweet note and rather dry wine for flavorful, spicy dishes.
