A simple but delicious cake recipe:

Preheat oven to 190 degrees. Melt the yeast in warm water.

Heat the milk with the butter until it melts and pour into a frying pan. Add sugar and salt. When the mixture is no longer hot, beat in the eggs (reserve 1 tbsp). At a maximum of 40 degrees, add the yeast. Add flour, nutmeg and the dusted raisins and beat heartily for about 5 minutes so that the dough becomes smooth, shiny and supple.

Shape dough into a clean, lightly buttered baking dish. Cover with a wet dishcloth and rise. Clean up and make a break.

After about 45 min, when dough has risen to twice its original size, pull with a spoon, turning the baking bowl leisurely. Cover and rise again. After 30-40 min, shape the dough on a floured board and divide into the desired number of pieces.

Knead the pieces briefly and shape into a loaf. Place each loaf in a well-greased loaf pan, being careful not to let the dough take up more than half of the pan, as these loaves rise a lot. Set aside and rise a third time.

Knead ingredients for the topping with your hands. When the dough has risen, brush it with beaten egg, cut the surface a little bit and spread the topping on it.

Bake at 190 °C for one hour until the bread is firm and golden brown.
