Soak dried plums for 2 hours. Set aside 6 dried plums and 6 apples. Remove peel from remaining apples, cut into slices and sauté briefly in 75 g butter. In a baking dish, mix the half-cooked apple slices and the pitted dried plums with 2 teaspoons of sugar, salt and pepper.

Fill the goose with the mixture and sew it up. Place the goose on the roasting rack over the juice pan and roast at 230 °C (gas mark 7). When goose is light brown on all sides, turn temperature down to 190 °C (gas mark 5).

Cooking time is 2 and a quarter hours in total. In the meantime, chop the cabbage, steam in the goose fat in a saucepan until soft, add the vinegar and 1 dl of water, season with salt, season with pepper, add the caraway seeds, cover and cook at a low temperature for about 1 and a quarter hours. Poach 6 dried plums in their soaking water for 10 minutes. Cut unpeeled apples at three-quarters height all around to prevent skin from bursting. Hollow out apples, mold a mocha spoon of butter into each apple and bake in oven at 230 °C (gas mark 7) for 25 min. Remove stuffing from goose, carve goose and arrange on a heated plate.

Place the stuffing in the middle. Put a poached dried plum in each baked apple and place around stuffing. Serve red cabbage separately.

Geese are very suitable for sweet and sour dishes because of their fatty meat.
