Goose Legs with Onions and Apples

Rub goose legs well all around with salt and pepper. Sear in a frying pan with the skin side down, then turn to the other side. Then pour off the fat.

Place goose legs on a roasting rack with a fat pan. Roast the legs in the oven at 225 °C (gas 4/circulating air 180 °C ) for about 2 hours.

After one hour, turn to the other side so that the skin side is on top. Add peeled and coarsely chopped onions and apples. Occasionally baste the drumsticks with a mixture of the drained fat and water.

After 2 hours, remove from the roaster and keep warm on a baking sheet in the stove until the sauce is ready.

To do this, blend the onions and apples in the roasting stock with the blender. Season to taste with salt and freshly ground pepper. Serve with dumplings and red cabbage.
