Divide the ribs already from the butcher into pieces of 4 ribs each. Then rinse the ribs under running water and dry them, season with salt and pepper.

Peel the ginger, cut it into smaller pieces and squeeze the juice through the garlic press into a small stem pot.

Add the juice of one lemon, the soy sauce and the rice wine as well as the honey, the tomato ketchup and the sambal oelek and bring everything to the boil in a saucepan, stirring continuously.

Place the pork ribs in a suitable bowl and cover with the hot glaze, marinate for about 1 hour, turning frequently.

Then place the ribs level in a grill pan, brush repeatedly with the marinade and cook on the broiler until done.

Brush with the glaze a few times during the cooking time.
