Instructions:

For the glass noodle salad, boil the water, pour it over the glass noodles and let them steep for about 5 minutes.

In the meantime, finely dice the cucumber, spring onion and bell bell pepper.

Now cut the chicken breast into mung-sized pieces. Heat some oil and fry the meat well with the vegetable cubes. Season with salt, pepper and (only 2 tbsp) curry.

Now drain the glass noodles and marinate them immediately with the sesame oil, soy sauce and the juice of the lemon. Now fold in the meat and vegetable mixture.

Season everything with salt, pepper, the remaining curry, ginger and lemongrass. Sprinkle with the chili flakes before serving.
