For the iced orange foam, cut a lid off each orange. Then carefully scoop out the flesh. The peels will serve as bowls for serving, so they should remain whole.

Chop half of the pulp into small pieces. Beat the egg yolks, sugar and orange liqueur until creamy and then fold in the whipped cream. Fold in the finely chopped pulp as well and pour the cream into the orange peels.

Place the orange peels in the freezer for at least 8 hours (make sure they stand well and don’t tip over!). Remove the iced orange foam from the freezer 20 minutes before serving and decorate with whipped cream and cocoa powder.
