For the garlic in oil, first cut the garlic bulbs into individual cloves, blanch briefly in hot water with the peel, then immediately rinse with cold water – this makes it child’s play to peel the garlic.

Put 500 ml of olive oil and 500 ml of sunflower or rapeseed oil in a pot, add half of the peeled garlic cloves, free the fresh herbs from the branches, chop them as small as possible and add them to the pot as well. Heat this mixture for about 10 minutes (Attention: The oil must never be heated to over 100 °C – danger of splashing!).

If desired, mix the chili and paprika olive oil with the remaining oils in another pot, remove the seeds from the chili peppers, cut them coarsely and put them in a sealed tea bag together with the remaining garlic cloves in the pot. I don’t put the chili peppers in the prepared jars because it’s too much heat for me, but of course it can still be done! Heat for about 10 minutes as well.

Pour the garlic cloves into the prepared jars, please not too full, fill with the respective oil mixture and seal. Pay special attention to the headspace height of the jar, it is absolutely needed here when boiling down!

Boil garlic in oil at 90 °C for 90 minutes.
