For the game with chestnuts, boil the chestnuts with water and salt in a pot for 150 min on low heat. Remove the chestnuts, chop them coarsely and put them in a bowl.

Heat sunflower oil in a pan, add onion and sauté. Cut venison or possibly deer shred meat into thin strips, add and sauté. Add chestnuts, brown briefly and remove everything from the pan.

Now fry finely chopped onion, sprinkle with flour and stir. Add the red wine, stir well with a whisk and bring to a boil. Finely chop the parsley and add. Stir in the cream, season with salt and pepper and simmer gently for about 15 minutes.

Add sliced venison and chestnuts, do not cook any more.

Serve game with chestnuts with cranberries and croquettes.
