For the turkey salad, cut the turkey breast into strips. Mix lemon juice and soy sauce. Marinate the turkey breast in it.

Cut melon into slices. Cut pear into wedges. Wash currants and raspberries. Crush half of the currants.

Mix with remaining lemon juice, honey, mustard, salt, pepper and oil. Toast sunflower seeds in pan, remove. Grill turkey breast in pan for about 3 minutes.

Season with salt and pepper. Slice fennel and fry briefly. Wash lettuce and marinate to taste.

Arrange everything and sprinkle with seeds.
