For the fruit in batter, first mix white wine with yolks, sift flour and gradually add to wine and stir until smooth.

Beat the egg whites with sugar and salt until creamy and fold into the wine mixture. If the mixture is a little too firm, add a little more wine.

Heat enough oil to fry the fruit until it floats. Fruits like bananas, pineapple, strawberries are very good for frying. Cut the fruit into bite-sized pieces, dip them into the batter and fry until golden. Sprinkle the fruit in batter or drizzle with honey.
