For the fried spinach with fried eggs, wash the spinach thoroughly and spin dry. Peel and chop the shallots and the garlic clove.

Heat some oil in a pan and sauté the shallots and garlic. Gradually add the fresh spinach. When the spinach has collapsed, season with salt, pepper and nutmeg.

Make four small cavities in the spinach, crack the egg into each one and sprinkle with some grated Parmesan. Put the lid on and let the egg set. Serve the fried spinach with fried eggs.
